Peanut Butter and Jelly Cupcakes

Most of us grew up eating peanut butter and jelly sandwiches, I know I did. So when I found this recipe on How To Eat A Cupcake's blog I was excited.

Peanut Butter Cupcakes
makes 24 cupcakes

6 tablespoons (3/4 stick) unsalted butter, at room temp
1 cup smooth peanut butter
1 1/3 cups firmly packed light brown sugar
3 large eggs
1 tablespoon vanilla extract
3 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
1 cup milk

1. Preheat the oven to 350 F. Insert 24 liners into a medium cupcake pan.

2. In a large bowl cream together the butter, peanut butter, and brown sugar with an electric mixer on medium speed and mix until fluffy, about 3-5 minutes. Add the eggs one at a time. Beat well. Mix in the vanilla.

3. In a separat bowl use a wire wisk to combine the flour, baking powder, and salt.

4. Add the dry ingredients to creamed mixture, alternating with the milk. Mix well. Make sure to scrape down the sides of the mixer every now and than. The batter will be a litte on the thich side

5. Fill the cupcake liners 2/3 full. Bake for 15-20 minutes or until toothpick inserted in the center comes out clean. Cool cupcakes in the pan 10-15 than transfer to wire cooling rack.


Peanut Butter Frosting

3/4 cup smooth peanut butter
3/4 cup (1 1/2 sticks) unsalted butter, at room temp
1 tablespoon vanilla extract
3 cups confectioners sugar
3-4 tablespoons milk

1. Cream the butter and peanut butter until smooth and there are no clumps, add in the vanilla

2. Add sugar and milk. Scrap down the sides and bottom of the bowl to make sure all the sugar has been mixed in. Mix on high to create fluffy frosting.

Filling and frosting the cupcakes

1. Using either an apple corer (not corer and slicer just a corer) or the end of a large icing tip hollow out the center of the cupcakes than spoon in you favorite flavor of jelly.

2. Using either a large round icing tip or simply cut off the tip of the piping bag to the desired size, pipe the frosting on to the cupcakes.

3. Using a size 3 round tip drizzle the jelly ontop of the peanut butter frosting and enjoy!

Strawberry cupcakes. Now you might be wondering why some jelly is piped and some is just dropped on. Simple, I was not paying attention and bought preserves instead of jelly and the preserves clogged the icing tip.
